For me, it's either Dreadnaught, Freezeflame, or Good Egg Galaxy for SMG1 and either Grandmaster, Space Storm, Boss Blitz, Melty Monster, Twisty Trails Galaxy or Bowser's Gravity Gauntlet for SMG2...

Galaxy 1: Toy Time, Beach Bowl, and Sea Slide.
Galaxy 2: The beach one, the Chain Chomp one, Throwback, Twisty Trials, and alot of others that aren't the ruins place.

Beach Bowl Galaxy and Honeyhive Galaxy. I don't have Super Mario Galaxy 2, but my favourite is Throwback Galaxy.
